About this wine

From SEVEN CEDARS winery, located in the central part of Yamanashi Prefecture, comes "KOSHU Cuvée WW 2025 (White)", a dry white wine with 12% alcohol, made from Koshu grapes harvested from the hills of the Fujii district in Katsunuma town.

This wine is crafted using Koshu grapes from Yamanashi Prefecture, blending fruit from vineyards cultivated by Kazue and Shigenori Wakabayashi, and a plot inherited by Kikuo Wakabayashi. The grapes, ripened through meticulous and dedicated cultivation management, yield a wine with a pale orange-tinged yellow hue. It unfolds with a sweet and gentle aroma reminiscent of mandarin oranges, loquats, and pears. The palate begins with a soft attack, leading to a mid-palate where balanced tannins, bitterness, and acidity are elegantly perceived. The design brings back a sweet fruitiness in the aftertaste.

This wine is at its most delicate yet shines with bottle aging. It truly reveals its value when paired with dishes featuring delicate dashi broth or the umami of mushrooms.
