About this wine

The 2024 Château HONJŌ KŌSHU Kamoshi Tokiwa ni Moeru draws from the lineage of the 'kamoshi' method, a style that IWASAKI brewery has practiced for decades in Yamanashi Prefecture. By harvesting highly ripe Koshu grapes in late autumn and fermenting them with their skins, a sense of volume is created from acidity, bitterness, and alcohol.

As you pick up the bottle, a story unfolds before your eyes. The label features "Yoi" by Juri Ando, and the name "Tokiwa ni Moeru" is a quote from an ancient waka poem about Mt. Fuji found in the collected works of Kakinomoto no Hitomaro. This Koshu wine, crafted using a classical brewing method, embodies the wish for it to be a multifaceted presence, much like Mt. Fuji, which changes its appearance depending on the era and the viewer.

With an alcohol content of 12.5% and a dry, medium body, the volume derived from its acidity, bitterness, and alcohol enhances the sweetness and umami of food, creating a richness with spatial and temporal depth. At the end of your day, why not open this bottle as an option to simply savor a glass?
