White wine from Japan — Miyazaki, Japan
AYA TOPIA 2025 (White)
KATSUKI wines / Miyazaki, Japan

About this wine
This white wine from KATSUKI wines in Miyazaki Prefecture, AYA TOPIA 2025, is crafted by harvesting three varieties – Portland, Kyoho, and Niagara – at different times, fermenting each individually, and then blending the entirety.
Portland is harvested in early August, followed by Niagara and Kyoho in early September. Each variety is handled with about three weeks of low-temperature fermentation using wild yeast. After fermentation, the wine undergoes one racking and is aged for about 10 months in stainless steel tanks before being bottled in July 2026.
This white wine, where grapes harvested at different times integrate within a single bottle after their respective journeys, faithfully reflects its origin as a 2025 vintage from Miyazaki Prefecture. Tonight, why not turn your attention to the creation process as you place this bottle by your side?
