This velato YAMAKITA Chardonnay Sparkling 2023 is crafted from Chardonnay grapes grown in the Fujita Farm in Yamakita, Kōnan City, Kōchi Prefecture. The base wine was brewed in early August 2023, followed by a traditional méthode champenoise (bottle fermentation) starting in February 2024. After approximately one year of contact with the lees to develop complexity, it underwent disgorgement in March 2025, resulting in a dry Brut Nature. This is a white sparkling wine with an alcohol content of 11.5% and a volume of 750ml.

As you gently tilt the glass, aromas of green apple, lemon, lime, pineapple, and herbaceous notes emerge, complemented by hints of bread, biscuit, and almond from aging. This bottle, handled by INOUE winery, showcases the individuality of Chardonnay nurtured in Kōchi Prefecture, culminating in a rich layering of aromas through nearly a year of lees contact and meticulous bottle fermentation.
